  • 50g macadamia nuts, roughly chopped
  • 1 small red onion, thinly sliced
  • 50g bush tomatoes, halved (or cherry tomatoes if unavailable)
  • 10g lemon myrtle leaves, finely chopped (optional, for garnish)
  • 20ml olive oil, for drizzling

Native Spices Mix (Sprinkle over Pizza before and/or after it's cooked)

  • 15 large Lemon Myrtle leaves
  • 10 Mountain Pepper leaves (the more zest, the better!)
  • 1 clove garlic
  • 1/4 tsp salt
  • Pinch of black pepper

Instructions:

Step 1: Make the Dough

  • In a bowl, mix the warm water, sugar and yeast. Let it sit for 5-10 minutes until frothy.
  • In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  • Mix until it forms a rough dough. Turn it out onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a clean tea towel and let it rise in a warm spot for 1-2 hours, or until doubled in size.

Step 2: Spice It Up

  •  Blend that native spice mix until fine. Be cautious, it might bite! 

Step 3: Preheat the Oven
